Simple and quick meal that has a great balance of flavors!
Prep Time: 10-15 minutes
Ingredients
- 2 packed cups shredded or cubed cooked chicken, approximately 2 breasts
- 1 Pink Lady apple, cubed (or any sweeter style apple)
- 2 ribs of celery, finely diced
- 1 cup seedless red grapes, quartered
- 2/3 cup Flippin Nuts Cashews or Pecans
- 1/2 cup plain yogurt or mayo
- 1 lemon, juiced – add zest if desired.
- White pepper, to taste
- Salt, to taste
Instructions
- Mix all prepped ingredients together!
Tips
- Use rotisserie chicken for easy prep of the chicken.
- Great on toast, small bok choy leaves or on a bed of salad greens.
