Waldorf Salad

Simple and quick meal that has a great balance of flavors! 

Prep Time: 10-15 minutes

Ingredients

  • 2 packed cups shredded or cubed cooked chicken, approximately 2 breasts
  • 1 Pink Lady apple, cubed (or any sweeter style apple)
  • 2 ribs of celery, finely diced
  • 1 cup seedless red grapes, quartered
  • 2/3 cup Flippin Nuts Cashews or Pecans
  • 1/2 cup plain yogurt or mayo
  • 1 lemon, juiced – add zest if desired.
  • White pepper, to taste
  • Salt, to taste

Instructions

  1. Mix all prepped ingredients together!

Tips

  • Use rotisserie chicken for easy prep of the chicken.
  • Great on toast, small bok choy leaves or on a bed of salad greens.
